Chipotle lime shrimp with saffron rice
Nothing says home like some stove top cooking. The shrimp was marinated in lime juic mixed with chipotle and cayenne and the yellow rice was awesome.
Rotini Carbonara
I made a carbonara sauce with pancetta and served over top of rotini. Finished with a full egg yolk. Mmmm

Long Red Hots. Dried &Fried.
One of my favorite thing that my grandparents and parents made. Just did it for the first time myself.
#1. Find some nice hot peppers from the farmers market
#2. With a thread and needle, put a thread through all the stems, and hang them to dry somewhere. About 3-4 weeks.
#3. Put them in some very hot oil for about 5-10 seconds until they shrivel and get a darker color.
#4. Put them on stuff and nom.
Olive oil poached pollock
Olive oil poached pollock, saffron rice, yellow squash, side of salad with tomato, baby arugula, mozzarella and topped with a shake of black truffle salt.
Almond-Encrusted Mahi
Stopped at the Big Fish Grill for dinner. Ordered the almond-encrusted mahi special. It was quite good. Served with capers, green beans over sliced potatoes. The capers didn't quite mix with the rest of the flavors, but I ate around them and really enjoyed my meal. Would have given it 3 Nom's without the capers (I usually love capers).
Watercress Pesto
I made a roasted garlic pesto and used watercress instead of basil. Awesome. Served with bucatini and some extra roasted garlic.
NY Strip, Onion Rings, and Peas
First steak on the new grill! All food items purchased at Trader Joe's tonight. I sprinkled Montreal Seasoning in the steak. The onion rings were surprisingly awesome. Fantastic meal all-around.
Blackened Tilapia
With a side of spicy chilled cucumber gazpacho. Refreshing, light and delicious!
